Four generations have handed down the historical memory of the cheese-making tradition of the Biella alpine valleys. Over the course of more than 120 years, love for their land and passion for creating cheese have resulted in excellent production.
Caseificio Rosso produces and refines cheeses typical of Piedmont, made using traditional processes and 100% Piedmontese milk, collected every morning from local farmers.
Raw milk Maccagno is a soft, medium-ripened cheese made from raw whole cow's milk. The flavour is fine and refined with notes of butter.
Caseificio Rosso is located in Pollone, in the province of Biella, in the heart of Piedmont. On the slopes of the mountains in this area, milk is collected daily from Biella farms characterised by the traditional method of rearing the Razza Rossa d'Oropa breed.
