The Bertagni family has always lived in the Garfagnana highlands, living in harmony with the land as shepherds and cheesemakers. Verano Bertagni combines these two professions, creating cheese with the wisdom of someone who knows animals and their characteristics.
The Garfagnana sheep is famous for producing milk that is particularly sweet to the palate, very digestible and rich in protein. There are many types of pecorino produced by Bertagni, including one with truffles, chives and chilli pepper.
Tuada, a pecorino characterised by the strong flavour of sheep's milk that then softens and envelops the palate with the whole repertoire of flavours available: nutty, woody, pressed grass and finally - a trump card - the barely hinted at spiciness.
Caseificio Bertagni is located in Pieve Fosciana, in the province of Lucca, in the heart of Garfagnana, a verdant land straddling the Apuan Alps and the Tuscan-Emilian Apennines.
