Pecorino with lemon balm
Directly from the Tuscan hills, a semi-aged pecorino cheese made from sheep's milk, refined in its rind with fresh lemon balm leaves. The aging in the 'ziro', a traditional terracotta container typical of the region, allows the lemon balm to slowly release its delicate natural aromas. The result is a cheese with a delicate fragrance featuring distinct lemon notes and herbaceous hints, which surprises and wins over with its freshness and aromatic finesse.
