Pecorino with walnut leaves
This semi-aged pecorino cheese is made with only sheep's milk from local pastures, according to a careful and meticulous artisanal process. After manual pressing and an initial period of maturation in a controlled environment, the cheese is hand-salted, treated with Tuscan extra virgin olive oil, and wrapped in walnut leaves. It then undergoes aging in terracotta jars, which gives the product elegant, delicate, and slightly bitter notes, capable of winning over from the very first taste.
It pairs wonderfully with fig or pear jams and a glass of Tuscan Vin Santo for an unforgettable end to a meal.
