Italico

Italico is a soft cheese made with rennet coagulation, embodying the excellence of Italy’s cheese-making tradition. Produced in the fertile regions of Lombardy, it boasts a cylindrical shape with a thin, smooth rind in a reddish-yellow hue. The paste is soft and compact when sliced, revealing a creamy interior with a straw-yellow color, offering an intense flavor that highlights the quality of the cow’s milk used, combined with salt and rennet. 

 

Aged to perfection in about 30 days, this cheese is perfect enjoyed on its own or paired with light white wines that enhance its aromatic profile.
