Millefeuille with Marzemino
Formaggio Millefoglie al Marzemino is a Venetian cheese made with Italian milk, Marzemino passito wine (3%), salt, and rennet. The pale yellow paste with Bordeaux streaks emanates an intense, fruity, and vinous aroma. The taste is sweet, with the wine harmonizing perfectly with the sweetness of the paste, and the cheese's slight spiciness lingering. The texture is compact with slight fissuring. Externally, it takes on a cylindrical shape with an almost smooth purple Bordeaux rind. In the past, the layering of cheese was considered a defect, but here it's a creative choice: the layers are filled with Marzemino Passito, creating a masterpiece.
