Baked Ricotta
Baked ricotta, a dairy product with a soft and compact texture, originated to extend its shelf life beyond that of fresh ricotta. Historically, it was placed on metal grates near a hearth, where the smoke from burning wood, used to heat the area, slowly dried the product.
