San Simon da Costa PDO

Queso San Simon da Costa, a typical cheese from Galicia, particularly the province of Lugo, is crafted from the milk of Rubia Gallega, Parda, or Frisona cows, both raw and pasteurized. Its quality and authenticity are guaranteed by strict PDO regulations that oversee the entire process, including the cows' traditional grazing and consumption of native forage. The cheese's distinctive shape and light smoking, achieved using bark-free fir wood, make it truly unique. 

 

With a delicate taste, gentle smokiness, and a subtle scent of freshly milked cow, it's perfect for fillings, sauces, and pairs well with young red wines.
