Quintano

Quintano is a goat cheese as intriguing as it is delightful: initially delicate, it develops nuances of undergrowth and truffle during aging.

Starting from the second week of aging, the rind is washed with brine enriched with Brevibacterium linens to encourage sub-crust proteolysis. This also contributes to the creation of the cheese's distinctive aromas: hints of undergrowth, cooked butter, and hay. With aging of over 60 days, animal and mature wood notes start to emerge.

 

Enjoy Quintano with chestnut honey or dark fruit preserves. Enhance its complexity with structured white wines or delicate reds.
