Formajo Ciock is a unique cheese infused with red grape pomace, a tribute to traditional cheesemaking artistry.
Its creation harkens back to the ancient practice of immersing cheese in grape pomace, now evolved. After 10-15 days of immersion, the cheese dries and matures briefly, ready for consumption. An irregular crust with traces of grape pomace makes it visually distinctive.
The yellow straw-colored paste is compact, semi-hard yet crumbly, melting in the mouth with creaminess. The intense grape pomace aroma accompanies a boldly slightly spicy flavor, with a pronounced cellar note owing to Cabernet and Merlot grape pomace.
Formajo Ciock pairs well with rustic bread and fruit preserves, and is heightened when matched with a robust red like Cabernet Sauvignon.
