Grape Must

For centuries, in the Emilia Romagna region, grape must has been produced through slow cooking in large rotating containers at low temperatures. This process yields a concentrated juice that preserves complexity and aroma, thanks to various Lambrusco grape varieties used.

 

During fasting, Grape Must is highly appreciated. When mixed in equal parts with water, it becomes a refreshing beverage beloved by children in hot summers.
