PDO Raschera
Raschera Dop, made from raw cow's milk, comes in two versions: round or square. The thin, smooth rind varies from gray to reddish with hints of yellow and reddish blooms. The elastic paste, white or ivory, contains scattered small eyes.
The flavor of Raschera ranges from sweet and delicate in the fresh variety to savory and moderately spicy in the aged version. Perfect with seasonal vegetables.
