Organic Prosciutto crudo di Parma
Parma Ham is a Protected Designation of Origin (PDO) cured meat. Only the fresh hams from well-raised pigs, carefully monitored during the aging process, and possessing the unmistakable sweet flavor, can aspire to bear the crown. In the production of Parma Ham, only salt can be used, with no smoking or freezing permitted. Parma Organic Ham, according to the regulations, is characterized by the absence of preservatives. The only ingredients used are good meat, precisely measured sea salt, time (aged for up to 16-18 months), ample ventilation, and low humidity.
Parma Ham is commonly enjoyed thinly sliced as an appetizer, but it also shines in more complex recipes like classic tortellini. It pairs well with fresh fruits such as figs or melons. Parma Ham pairs nicely with aromatic white wines like Malvasia dei Colli di Parma or Malvasia istriana, but it also complements light and fruity red wines.
