Historical Rebel, formerly known as Bitto Storico, is without a doubt one of the symbols of Lombardy cheese production. Characterized by a long tradition and an extraordinary ability to age, this cheese is deeply linked to the majestic mountains where it originates. The heart of its production is in the valleys formed by the stream that gave it its name: Gerola and Albaredo, in the province of Sondrio.

The cheeses produced in the alpine pastures of these valleys, which extend from 1400 to 2000 meters above sea level, retain truly special characteristics. The producers are committed to keeping alive a series of traditional practices that enhance the quality of the cheese. At the same time, they play a key role in preserving the environment and alpine biodiversity.
