PDO Bitto
Bitto is one of Italy's finest cheeses with Protected Designation of Origin (PDO) and has been recognized since 1996. It is a mountain pasture cheese made with raw whole milk from Bruna Alpina cows, which can contain up to 10% goat's milk. Bitto production originates from the Orobic side of Valtellina. The cheese takes its name from the Bitto stream that flows through the valley of the same name, but today production also extends to the nearby mountain pastures and, in general, to the entire territory of the province of Sondrio and some neighboring municipalities in the province of Bergamo.
Bitto is produced exclusively during the summer season, when the cows and goats are taken to the mountain pastures at an altitude of about 2,000 meters. The milk is processed immediately after milking in the "calecc", stone shelters, or in the huts, thus ensuring the production of a highly prized cheese. The color, taste and aroma of Bitto are unique, unmistakable and inimitable.
