Zuccanera with Saffron
Zuccanera is a goat's cheese with a flowered rind, obtained by a special process: two goat's cheeses are combined, one natural white and the other yellow with saffron, and then the cheese is covered with vegetable charcoal, which during the aging process becomes interwoven with noble molds with gray and pinkish highlights. The paste of Zuccanera is crumbly in the center and creamier in the lower crust. The aroma in the nose is of raw milk, goat's milk, saffron and undergrowth, while in the mouth there is more charcoal, with some spicy notes in the more mature cheeses.
Zuccanera is an excellent meal and aperitif cheese. It goes well with fruity, not too full-bodied reds and light whites, even sparkling.
