PDO Vastedda del Belice
Vastedda del Belice PDO is a unique cheese in Europe: a pasta filata made from raw sheep's milk from the Belice Valley, white in colour and with a sweet, fresh and pleasant flavour. Its peculiarity is the spun paste process, which is very rare in sheep's milk cheeses because the casein in sheep's milk does not facilitate spinning.
The production of Vastedda del Belice PDO requires the use of historical, wooden tools, such as the piddiaturi, latina, the tavoliere or spersore, the rotula and the stick or spinning paddle, as well as the tinned copper cauldron, the fiscelle made of reed and ceramic bottom plates. With the use of these tools, the milk is enriched with a pro-cheese microbial flora that gives Vastedda del Belice PDO its particularity and specificity in a natural way.
