Buffalo cheese with Glera grapes
Formaggio di Bufala al Glera is a cheese made with buffalo milk and Uva Glera marc from the production of Prosecco DOCG Conegliano.
The rind is thin and covered with dried marc. The texture is firm and paste-like. The taste is sweet, round, pleasant, with aromas of marc. The olfactory aftertaste is long, round and perfumed with delicate aromas of Glera grapes, with hints of cellar, wood and grappa near the rind, where the aging makes the aroma more pronounced.
