Sausage with chilly

Spicy seasoned sausage is a very recurring product in Calabrian recipes, so much so that it is still the most sought-after sausage today; present a horseshoe shape, but it can also be had in pieces, sticks and long horseshoes.
The mixture is flavored with wild fennel and is made from the meat of the shoulder and underbelly of the sounds.
Curing takes about 45 days.
