Fillet is the noble cut par excellence: it is obtained from the back of the bovine and has an elongated shape, is bright red in color and has an intense flavor but much more delicate than a rib. It is characterized by an incredible tenderness and succulence because it is composed of muscles that are used very little during the life of the animal.
