Goat Caciottona with pepper and olive oil
A particular goat cheese, in which the well-defined flavor of pepper meets in a perfectly balanced way with the pleasant spiciness of goat cheese.
This caciotta is massaged with an intense and fragrant extra virgin olive oil and then flavored with black Tellicherry pepper from Vietnam: this choice is not accidental, since this cheese is a tribute from the Perenzin Dairy to this location - among the more remote - of the Silk Road.
Perfect to be tasted alone, on a platter of cured meats and cheeses but also as a base for an original cacio e pepe!
