Buffalo Ricotta

Buffalo ricotta is a fresh dairy product obtained by coagulation of buffalo milk whey and produced in some provinces (in part or in whole) of the Campania, Lazio, Puglia and Molise regions.

It has no external rind and is porcelain white in color. Its texture is creamy and soft while the flavor is fresh and delicately sweet.
