Kosher Grana Padano
Jewish law requires that in the production of Grana Padano Kosher, a Jewish mashgiach or supervisor must be present from the start of milking to the end of processing to ensure that only Kosher raw materials are used.
Analysis of the production cycle: in this phase the machinery and raw materials are analyzed, evaluating the risks of any contamination between kosher food and tarèf;
- Milking: the Jewish supervisor checks each production unit for the absence of unsuitable animals and the origin of the milk.
- Collection and processing of milk: constant monitoring of processing and active participation in one of the main process phases is envisaged: the dosage of kosher rennet. The specialized rabbis also establish what are the procedures in accordance with the Torah for the purification of food, the cleaning of utensils and workplaces.
- Cheese production: all the pieces are checked and, after the appropriate checks, signed in recognition of their conformity.
- Labeling control: the Rabbi verifies that the label complies with the regulations.
