PDO Prosciutto Crudo di Parma

Prosciutto Crudo di Parma DOP is a ham obtained from pigs weighing over 200 kg. After an initial seasoning of 12/13 months in the hills of our Apennines, it finishes its seasoning together with Culatelli in the damp cellars of the Antica Corte Pallavicina. It is an exceptional ham, weighing 11/14 kg, which reaches the peak of quality at 24 months.

 

Prosciutto Crudo di Parma PDO is produced without nitrates, sugar, flour or any other additives or stabilizers. The only ingredients are pork, salt and the expert hand of the masalèn ("norcino" in the Emilian dialect).
