Maccagno
Maccagno Reserve is a soft textured cheese, medium ripe, made of whole pasteurized cow’s milk. The flavour is sweet and delicate with a hint of butter. The Maccagno cheese is the very best of the Biellese cheeses. It takes its name from the pasture of the same name which lies below Mount Cossarello, to the north of Biella. Maccagno was first made in the valleys situated in the east of the Biellese territory; later production extended all over the province of Biella. It was the favourite cheese of Queen Margaret of Savoy and of Quintino Sella, minister of the Kingdom of Italy and founder of the Italian Alpine Club
