Aged PDO Pecorino Sardo

Aged Pecorino Sardo is cylindrical in shape with flat sides. The rind is smooth, consistent, brown in color in the more seasoned forms.

The paste is white, tending towards straw yellow with the progress of aging, compact or with few holes, with a strong and pleasantly spicy taste; the cheeses, matured for no less than 2 months, weigh around 3Kg, but can also reach 4 Kg.

 

All the forms of aged PDO Pecorino Sardo are released for consumption with the denomination mark arranged in a radial pattern and a numbered stamp that uniquely identifies each form:
