Transhumance is one of the key passages of pastoralism. Every year, since time immemorial, in spring and autumn, thousands of animals are driven, from dawn to dusk, by groups of shepherds along constant routes between two regions of the same geographical area, different in altitude or climate. Transhumance is something more than a simple herding practice, it is a ritual involving family relationships, shared social practices. The shepherd need a profound knowledge of the land, of the animals, as well as a great capacity to adapt to the unexpected events of the road.
Sicily is one of the Italian regions where the tradition of transhumance is still alive: twice a year the shepherds 'sgavìtano a muntagna' (ascend the mountains), thus guaranteeing, in addition to better animal welfare, products rich in fragrances and nutrients, such as in Centroform products
Cheesemaking is a passion for Caruso family, owners of Centroform, since two generations. From early 1900s, their shepherd ancestors were artisanal cheesemakers, whose activity was mainly located around Etna. Later, they moved their flock of sheep in Aidone, because of the richer pastures which yields high quality milk and well contributes to animal well being. You can taste the scents of Aidone's pastures in products such as Pecorino with chives and Pecorino siciliano pdo.
