Puzzone di Moena DOP is a semi-hard, semi-cooked cheese made from raw milk. Its curious and distinctive name derives from the intense aroma that characterises it, due to the practice of ‘sponging’ i.e. washing the rind during ripening, which keeps the surface moist and gives the cheese a pungent and penetrating aroma. This process helps develop the unique and complex flavour of Puzzone di Moena, which combines sweet and slightly spicy notes.
Puzzone di Moena PDO can be recognised by its shape, which has the wording ‘Puzzone di Moena PDO’ stamped several times on the heel, thanks to the branding bands used during production.
The milk used comes from cows fed with non-genetically modified fodder, guaranteeing a genuine, high quality product. Completely free of additives and preservatives, Puzzone di Moena DOP is a true Trentino excellence that encapsulates the authentic flavour of the mountains. Its paste is soft and melting, with a moist, reddish rind that develops thanks to manual care during maturing.
