Caseificio Rosso's Goliardo is a unique and special cheese, made from pasteurised whole cow's milk and Barbera d'Asti DOCG wine. 

 

This soft, matured cheese is distinguished by its aromatic flavour reminiscent of wine notes, creating a perfect balance between sweetness and acidity. Goliardo is also matured in the marc, giving the product further nuances of flavour.

 

Goliardo is the result of high-quality, artisanal processing. The wine is added directly to the milk during the production of the cheese, which is then matured in underground rooms on special spruce ladders for a period of 30 to 60 days

 

Goliardo is a delicacy for the palate, with its characteristic mix of flavours that make it unique. Perfect to enjoy on its own, in combination with full-bodied red wines or accompanied by dried fruit and honey, Goliardo is an ideal choice for those who love special and refined cheeses.
