Antica Corte Pallavicina has been producing cured meats for 150 years, the salumi produced at KM 0 are a product of excellence that valorises the short supply chain and local production. Thanks to the raw material coming from the farm's own farms, it is possible to guarantee the freshness and quality of the final product.

 

Nera Parmigiana pig breeding in the Parma area dates back to the 1400s, with black-coated pigs being particularly prized. In 1820, the first mention of the Parmigiana breed described an animal of high weight and exquisite meat. The breed's disappearance in the 20th century occurred with the transition to other breeds, such as the Large White.

Thanks to the meticulous work of the Antica Corte Pallavicina and other breeders, the Nera Parmigiana, an ancient breed capable of releasing inimitable aromas and flavours in synergy with its territory, has been recovered and returned to the Parma countryside. 

 

The short supply chain also reduces the environmental impact of transport and supports the local economy. KM 0 cured meats offer a unique and genuine flavour, the result of craftsmanship and attention to tradition.
