The Birbablu by Caseificio Pierluigi Rosso also arrives as a pleasant surprise: it is a blue-veined cheese further refined by immersion in one of Piedmont's best craft beers, Birrificio Un Terzo's Margot; a final nuance of flavour to complete this work of art balanced between notes of butter, blue-veined cheese and beer in the aftertaste.

Made from pasteurised cow's milk and matured with the inoculation of noble mould Pennicilium Roqueforti, its white, slightly eye-catching paste is characterised by blue streaks.

A true poem for the eyes and palate.

 

Birbablu was awarded the Prix Coup de Coeur and the World Cheese Award 2022-2023 with the Gold Award.
