Montanara alle Erbe
Montanara alle Erbe is a semi-soft cheese made from local whole pasteurized cow's milk. During production, fennel and coriander seeds are incorporated to enhance its flavor. The thick grey-brown rind may develop colorful molds during extended aging, but it is not edible. The cheese's bright white paste features scattered small eyes. It offers an intense and aromatic taste. These wheels mature in underground environments, on white fir shelves, for a period ranging from 30 to 90 days.
It is perfect both as a table cheese and for culinary applications.
