Smoked Agerola Pearls
The scamorza beads are a product to be smoked and are loaded into the smokehouse. The skin is smooth, shiny and homogeneous, of medium consistency. Inside, the paste is cream-coloured, with a fibrous structure and a soft consistency. They give off a strong smell of smoke. The taste is slightly salty with a pungent smoky note.
It can be enjoyed cold, with tomatoes, in salads or in any case with vegetables in general, but it is recommended, to fully appreciate its qualities, to eat it heated in the oven, in the microwave or in a pan, but always hot. It can be combined with red wine. Perfect for aperitifs as the small size lends itself to small bites one after the other. They are also cut into baked pasta and savory pies to give a more decisive taste.
