Fresh Stracchino is the delicate gem of Northern Italy, crafted from whole cow's milk. Often called "crescenza," it's an ode to the Po Valley. Its name derives from "crescentia," Latin for "to grow," as the cheese swells and opens like rising bread when kept warm. Its creamy, soft paste carries gentle notes of fresh milk.
