PDO Bra Tenero
The Bra Tenero, a DOP cheese, is crafted using whole cow's milk from the province of Cuneo. The paste, with its creamy white color, is soft and elastic, featuring sparse eye formation and a thin yellow-brown rind. The minimum aging period of 45 days is regulated by the guidelines.
Thanks to its delicate flavor, the Bra Tenero is perfect for high-quality fondue. It's also splendid enjoyed on its own, on crostini, or as an ingredient in gourmet dishes.
