Organic Goat Cheese
The organic goat cheese is obtained through pre-salting coagulation of Piedmontese goat milk. Its texture is truly unique as the cheese ages. The core remains compact and somewhat crumbly, while the outer layers become increasingly elastic and flavorful.
The careful aging process also promotes the development of a light layer of penicillium candidum on the surface. The taste is a combination of two distinct sensations: a fresh and delicate flavor at the core, enveloped by a more intense and aromatic flavor in the outer part.
