BirbaBlu - Blue Cheese aged with Margot Beer
BirbaBlu is an evolution of GratinBlu: a compact paste made with whole pasteurized cow's milk and, like many blue cheeses, matured with the inoculation of noble Pennicilium Roqueforti molds.
Birba Blu is further aged in one of Biella's finest craft beers, Margot; a final nuance of flavor to complete this work of art, balanced between buttery, blue-veined and beer aftertaste notes.
The paste of BirbaBlu is white and compact but melts in the mouth. It has characteristic and diffuse blue veins. The taste is a delicate balance between the butter and beer notes and the spiciness determined by the herbs.
