Montebore

Montebore, a famous cheese, owes its name to the village of the same name, located in the picturesque Val Curone. Montebore is made with an expert blend of raw cow's milk (75%) and sheep's milk (25%), which gives it a unique and unmistakable taste. This combination of milks gives the cheese a complexity of flavors and an extraordinary richness of taste. The taste of Montebore is characterized by a delicate harmony between the sweet notes of cow's milk and the stronger nuances of sheep's milk, creating a perfect balance.

 

But it is not only the taste that makes Montebore an exceptional cheese. Its shape is equally fascinating and peculiar. It resembles a classic multi-tiered wedding cake, and it is said that this particular shape was inspired by the ruined tower that stands inside the castle of Montébore. The production technique consists of assembling three robiolas, usually of decreasing diameter, on top of each other, thus creating the original Montebore shape.
