PDO Seasoned Asiago
Asiago Stagionato (or Allevo) DOP is a Protected Designation of Origin cheese and is one of the cheeses protected by the Consorzio Tutela Formaggi Asiago. The Consorzio Tutela Formaggi Asiago ensures that the farms located in a specific geographical area provide their animals with a proper and healthy diet and that the milk is collected and processed into Asiago Fresco DOP in strict compliance with the processing and maturing procedures laid down in the specification. The Consortium also carries out constant checks on the cheeses before they are released to the market, in order to guarantee the consumer and the quality.
The product is made from partially skimmed raw milk and is processed in copper cauldrons using traditional methods. The cooking, the cutting of the curd and other aspects of the production process ensure that Asiago Stagionato has unique characteristics and flavors. It then undergoes a period of cooling, salting and subsequent maturation in storage for a minimum of 60 days, as required by the Asiago production regulations.
