Brica by Caseificio Bertagni is a cheese produced in Pieve Fosciana, in the steep valleys between the Apuan Alps and the Tuscan-Emilian Apennines. It is the result of the painstaking work of the Bertagni family, who have been working with milk for generations.
Caseificio Bertagni's Brica is a cow's milk caciotta made with raw milk and covered with a "flowered" rind, that is, on which it is possible to find the white mold that is essential for giving the cheese a truly special taste.
