Ricotta di Bufala is a fresh dairy product with the typical appearance of buffalo whey ricotta. White in color with a soft, grainy but not sandy consistency. 

In the mouth, the first sensation is that of being enveloped by a pleasant milky acidity, diffuse and persistent, followed by a satisfying persistence of delicacy that amplifies the flavors.
