Mozzarella with truffle
Tartufala is an Italian pasta filata cheese made from pasteurised buffalo milk with the addition of truffle flakes. It presents itself as a porcelain white ball with brown granules.
The aroma is sweet, with notes of lactic fermentation intertwined with a distinct tuberous flavour.
In order to fully appreciate the flavour of Tartufala, it is recommended that the product be soaked in warm water for about ten minutes before consumption, while still in the brine.
