Kosher Parmigiano Reggiano
Parmigiano Reggiano Kosher is a cheese that reconciles the discipline of Parmigiano Reggiano DOP with the strictness of Kasherut, the Jewish food legislation based on the interpretation of the Torah.
Parmigiano Reggiano Kosher is produced every day under the watchful eye of a Jewish inspector (called a mashgiach), who is present at every stage of the production process, from the moment the milk is loaded onto the lorries that take it from the cowsheds to the dairy, to ensure that it comes only from certified kosher farms and from the milking of cows "suitable" for kosher production.
It is characterised by the exclusive use of Kosher-certified calf rennet, produced using extraction methods that prevent contamination with any meat residues.
The only direct intervention of the supervisor in the cheese production phases is the distribution of the rennet in the "caldera", large pots in which the milk is cooked.
