Raw milk Maccagno
Maccagno a Latte Crudo is a soft, medium-aged cheese made from whole raw cow's milk. Its flavour is delicate and refined, with a hint of butter. It is a raw milk cheese that conveys the ancient history of the Piedmontese valleys, a testimony to the civilisation of the past and an example to be preserved for the future.
Maccagno takes its name from the mountain pasture of the same name, located below Monte Cossarello, north of Biella. Maccagno production began in the valleys east of Biella and then spread throughout the province of Biella. It was the favourite cheese of Queen Margherita of Savoy and Quintino Sella, Minister of the Kingdom of Italy and founder of the Italian Alpine Club.
