Maccagno
Maccagno is a soft, medium-ripened cheese made from pasteurised whole cow's milk. Its flavour is mild, pleasant and delicate, with a hint of butter. Maccagno is one of the best Biella cheeses. It takes its name from the mountain pasture of the same name, located below Monte Cossarello, north of Biella. The production of Maccagno began in the valleys to the east of the Biella area and later spread to the whole province of Biella.
It was the favourite cheese of Queen Margherita of Savoy and Quintino Sella, Minister of the Kingdom of Italy and founder of the Italian Alpine Club.
