Aged PDO Pecorino Sardo
Pecorino Sardo Mature is cylindrical in shape, with flat sides and a straight heel. The rind is smooth, firm and brown in the more mature forms. The paste is white, tending to straw with age, compact or with few eyes, with a strong and pleasantly piquant taste. The cheese is matured for at least 2 months and weighs about 3 kg, but can reach up to 4 kg.
All wheels of Pecorino Sardo DOP Mature are released for consumption with the mark of the denomination, arranged in a radial pattern, and a numbered stamp that uniquely identifies each form: the blue stamp identifies the forms of mature Pecorino Sardo.
