Organic PDO Buffalo Mozzarella
Mozzarella di bufala campana PDO is a fresh paste dairy product made exclusively from buffalo milk. Mozzarella di Bufala originated in Campania centuries and centuries ago, but the DOP is now produced in a part of central and southern Italy that includes parts of the regions of Campania, Lazio, Puglia and Molise.
The external appearance is porcelain white in color, very thin rind of about one millimeter with a smooth surface, never slimy or flaky. The structure of Mozzarella di Bufala Campana Dop is thin-skinned, slightly elastic in the first hours after production, with a tendency to become more melting later; when cut, Mozzarella di Bufala Campana Dop makes the famous "drop", a slight draining of whey with the scent of milk enzymes.
Mozzarella di Bufala Campana DOP should be kept in the brine to preserve its goodness; to fully appreciate its aromas and flavors, we recommend soaking the unopened bag in warm water before consumption.
